Thomas Cooper’s first recorded brew was designated brew “A”. According to his brewing log, dated 13th May 1862, “A” contained four bushels of Malt and eight pounds of Kent hops in 46 gallons of water, which he made into a Pale Ale and a slightly heavier Ale.

This rather intimidating name stemmed from the somewhat menacing people that frequented the neighbourhood. As such, it had a reputation for being a place to steer clear of at night. This devilish brew is inspired by the shady characters of the Devil’s Half Acre. As black as the sinister night, this full bodied Porter has ruby hints, delicious chocolate toffee malt character, moderate bitterness with fruity hop notes and a rich creamy head. Gladfield Toffee Malt per kg
Gladfield Toffee Malt is a unique malt produced by Gladfield Farm & Malting. Basically a fully caramalized malt that has been roasted at very low temperature. This special roasting cycle produces a very light colour and the resulting malt is toffee like to chew instead of the crystalized popcorn affect of using higher temperatures. The resulting malt is very popular for adding a malty toffee flavour to lighter coloured beers and also adds good beer stability, body and mouth feel. Due to the higher moisture content of Gladfield Toffee malt, we advise that when milling, the Toffee malt is blended through with your base malts. Created in 1985 by Hop Products Australia in the Rostrevor Breeding Garden in Victoria, Topaz was always intended to be a high-alpha hop. The result of a mix between an Australian high-alpha variety and a UK male sourced from Wye College in England, Topaz is a unique blend of Australian and European flavours and aromas. Topaz was initially used as a bittering hop, but in the late 2000s increased experimentation with the variety uncovered its intense worth as a late addition. It features resinous and grassy notes when dry hopped and its fruity profile really shines when utilised in higher gravity recipes. This recipe is named after the flight with United Airlines between Chicago (my hometown) and Sydney. I created it attempting to model one of my favourite brews at the time, Strata Amarillo IPA from Pirate Life Brewing. I was enjoying a good brew outside at the time, white I was manning the BBQ, and had a moment to thank the Universe that I was in such a good position. The beer itself is pretty simple, and the only real complexity to it is the depth of Strata, and the support flavours of Amarillo. Other than that, is almost a SMaSH. Give it a go and really discover what these hops are all about. I made the recipe early on in my brewing days, and it actually turned out quite well every time. It is a great beer for sitting outside and taking a moment to enjoy life. Our all-grain kits are our own tried and tested recipes for classic and modern beer styles.
