    When you don’t have temperature control for your fermentation, brew to season... Saison (French for Season) is a very old southern Belgium beer style (possibly early 1700s),which was traditionally made by farmer-brewers in the late winter, stored until summer then provided to thirsty seasonal workers (les saisonniers). In those days, the supply of beer was often considered to be part of their payment. Working for beer – some things never change! The diversity of brews from one farmhouse to the next probably explains why the BJCP style guidelines describe Saison (16.C.) as such a broad category, with variations across colour, alcohol, bitterness and late hop presence. Despite such variation, one could argue that the essence of Saison comes from the yeast. It’s a highly carbonated, bottle conditioned ale, which often displays quite funky characters such as fruity, spicy, peppery, cloves, etc. The Saaz hop addition, although not necessary and not the typical type of hop for this style, adds a little bit of extra spiciness to the finished brew. You may choose to ferment warmer than the recipe recommends getting even more funk goin’ on!     While sloe berries have a wide range of medicinal uses, at the Hop+Grain we use the for delicious sloe gin - a delicious crimson-red sweet liqueur made by steeping sloe berries in gin and sugar.  Try our recipe: You'll need: 100-150g sloe berries 50-80g caster sugar (depending desired sweetness) 70ml water 250ml gin a jar or bottle to hold everything while steeping 1. sterilise jar and equipment 2. rehydrate the sloes by soaking in warm water for a few hours - just enough water to cover, about 70ml to cover 100-150g berries 3. prick the skins of the berries with a needle during rehydration, to allow the flavour out. 4. put the sloes with the rehydration water into the bottle with the sugar, then the gin before sealing the jar/bottle. 5. shake the jar every other day during the first week, then a little shake once a week. 6. try your best to wait for 8-12 weeks for all the sloe falvour to infuse into the gin. PS. any white discolouration seen on some dried sloe berries are narually occurring sugars that precipitate on the surface during the dehydration process.

    Goodziskie is a traditional polish beer brewed with 100% Oat Smoked Malt that was revived by the Polish Homebrewers Association in 2011.The beer is traditionally light in the alcohol hops and smoke at 3-3.5ABV.     It is described as a mid-strength smokey type hybrid pilsner brewed with a German Ale or Kolsch type yeast. The smoke  favour is subtle unlike the German smoked beers from Bamburg and will be a great beer to drink as the nights get a bit cooler. This beer can benefit from a bit of cold conditioning and fining as you want it as bright as possible in the glass and carbonate to 2.5 volumes (5g/L CO2) Our all-grain kits are our own tried and tested recipes for classic and modern beer styles. Grown primarily in the Spalt region of Germany, it is one of the original landrace hops. Not to be confused with its offspring, Spalter Select, Spalt features notes of earth and spice alongside noble aroma qualities and has been likened to Tettnanger and Saaz. Its not grown commercially in the US due to its low yield, something that is problematic even in its native Germany. Despite this, the variety is in high demand by brewers and often outstrips supply.
