Galaxy is probably the most famous hop in Australia.  I’m willing to bet that every pale ale (9/10 at least) uses Galaxy in Australia.  It is an absolute powerhouse. My inspiration for this beer was born out of using the Norwegian yeast Kveik (pronounced Ka-wi-k) and the lovey fruit flavours and esters it produces.
